How much food and fuel you need depends on the number of families you have. Remember that each house needs twice as many rations in winter as they do during warmer seasons.

Maximize production of food and fuel in autumn

Autumn is a period when you must focus on preparing enough food and gathering enough firewood and charcoal. Build extra foraging and hunting buildings so you can move in extra workers during fall. Be sure to build hunting camps across the map so you leave enough animals to repopulate. To improve their numbers, publish the Hunting Grounds policy this improves reproduction by 50% but lowers harvests by 50% (which is good because you can hunt year-round, and it's easier than farming).

You can never have too much food, as you can easily sell any excess items through your Trading post. If you have problems with food and fuel reserves, do not hesitate to import them. Don't worry if your other industries suffer; your main focus is to have enough food and fuel to simply survive.

If you have some villagers normally assigned to pick berries during the other seasons of the year, you will want to assign them to another task during winter. Berries do not grow in the cold and snow from the winter season, so if you have them assigned to this task, they will basically do nothing. Instead, assign them to the surplus hunter camps you have. This will ensure that you have enough food to keep you going during the cold and your villagers are put to good use.

Besides hunger, cold is the other big threat to villagers during winter in Manor Lords. Build enough houses before the winter to ensure your people have a warm and safe shelter from the elements. This is very important at the beginning because villagers initially live in tents, and you can easily overlook a family because they can technically live there. But as soon as winter comes, they will be cold, which will negatively affect overall happiness.
