To answer the burning question, there is no particular island or landmark where you can fish for the limited-time fish in the Winter’s Edge Bestiary. Instead, you have to fish in the Ocean sections of the map. This was confirmed by the developers themselves who pinned a message saying, “ Winter’s Edge is Anywhere in the Ocean.” So, you can just go out to the ocean area and start collecting these fish using their appropriate bait.
